Bean Salad Simple and Delicious

This recipe is basic and easy to adapt with your favorite ingredients.






Ingredients:

2 cups cooked beans (any type: carioca, fradinho, white, black, etc.)

1/2 red onion, finely chopped

1 medium tomato, chopped

1/2 bell pepper (your preferred color) chopped

Chopped parsley and chives to taste

Extra virgin olive oil to taste

Vinegar (wine, apple or other of your preference) to taste

Salt and freshly ground black pepper to taste

Optional:


Cooked sweet corn

Chopped olives

Chopped boiled eggs

Cubed white cheese

Chopped cilantro

Lemon juice


Preparation:

Prepare the beans: If you cooked the beans at home, wait for them to cool completely. If you are using canned beans, drain and rinse well under running water.

Chop the vegetables: Wash and chop the onion, tomato and bell pepper into small cubes. Finely chop the parsley and chives.

Mix the ingredients: In a salad bowl, place the cooked beans, chopped onion, chopped tomato and chopped bell pepper.

Season: Add the chopped parsley and chives. Drizzle with olive oil and vinegar to taste. Season with salt and freshly ground black pepper to taste.

Add optional ingredients (if using): If desired, add sweet corn, olives, boiled eggs, white cheese or other ingredients of your choice.

Mix well: Gently stir all the ingredients so that they are well incorporated.

Adjust the seasoning: Taste the salad and adjust the salt, olive oil and vinegar to your preference. If you like a touch of citrus, add a little lemon juice.

Serve: The bean salad can be served at room temperature or chilled. It is a great side dish for many dishes, such as grilled meats, chicken, fish or even as a light meal.

Tips:


For a more intense flavor, you can marinate the chopped onion in a little vinegar for a few minutes before adding it to the salad.


If you prefer a creamier salad, you can add a little mayonnaise or plain yogurt.


Try adding other seasonings of your choice, such as cumin, paprika or oregano.


This salad can be prepared in advance and stored in the refrigerator for up to 2 days.
