Ingredients
2 filet mignon steaks (6 oz each)
2 tablespoons olive oil
Salt and freshly ground black pepper, to taste
2 tablespoons unsalted butter
2 cloves garlic, smashed
2 sprigs fresh rosemary
Instructions:
Preheat your oven to 400°F (200°C).
Remove the steaks from the refrigerator and let them come to room temperature for about 30 minutes. Pat them dry with paper towels.
Season both sides of the steaks generously with salt and freshly ground black pepper.
Heat the olive oil in a cast-iron skillet over medium-high heat until shimmering. Add the steaks and sear for 2-3 minutes on each side until a golden-brown crust forms.
