Ingredients:

For the pasta:

12 oz (340 g) elbow macaroni

Salted water, for boiling


For the cheese sauce:

4 tbsp unsalted butter

1/4 cup all-purpose flour

2 1/2 cups whole milk, warm

1 cup heavy cream

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1/2 cup Parmesan cheese, grated

1/2 tsp garlic powder

Salt and pepper, to taste


Optional topping:

1/2 cup breadcrumbs

2 tbsp melted butter


Instructions

Boil the macaroni in salted water until just al dente (about 7 minutes). Drain and set aside.

In a large saucepan over medium heat, melt butter. Add flour and whisk constantly for 1–2 minutes until golden.

Slowly pour in warm milk and cream, whisking to avoid lumps. Cook until thickened (5–7 minutes).

Stir in cheddar, mozzarella, and Parmesan until melted and smooth. Season with garlic powder, salt, and pepper.

Mix the cooked pasta with the cheese sauce until fully coated.


Bake it (optional):

Preheat oven to 375°F (190°C). Transfer to a greased baking dish. Mix breadcrumbs with melted butter and sprinkle on top. Bake for 20 minutes or until golden and bubbly.
