Peanut Butter Energy Balls

Ingredients

1 cup natural peanut butter (creamy or crunchy)

1 1/2 cups rolled oats

1/3 cup honey or maple syrup (for vegan)

1/4 cup mini chocolate chips (optional)

2 tbsp ground flaxseed or chia seeds (optional for extra fiber)

1 tsp vanilla extract

Pinch of salt


Instructions

In a large bowl, combine peanut butter, oats, sweetener, vanilla, and salt. Add chocolate chips or flax/chia seeds if using. Mix until well combined.

Using your hands or a cookie scoop, roll the mixture into small balls (about 1 inch in diameter).

Place the energy balls on a baking sheet or plate and refrigerate for 15–30 minutes to firm up.

Keep in an airtight container in the fridge for up to 7 days or freeze for up to 2 months.
